Green caviar is a green seaweed, Caulerpa lentillifera, known as green caviar in Japan and as sea grapes across Southeast Asia.
Both names describe the same thing. Clusters of small translucent spheres growing along a stem, catching the light like a bunch of grapes or a spoonful of roe.
Where it comes from
It originated in Okinawa, Japan, where it has been eaten fresh for generations, usually raw in salads, prized for a texture that pops between the teeth. It grows across Southeast Asia too, particularly in the Philippines, Thailand and Vietnam.
What makes it unusual is how difficult it is to farm. It demands specific water quality and growing conditions, which is why only a handful of countries cultivate it commercially. Unlike kelp or spirulina, which grow readily and turn up in everything, green caviar has stayed relatively rare.
What it contains
The composition research on green caviar is thorough, and it explains why the ingredient earned attention.
Amino acids. Total amino acid content ranges from 7% to over 12% depending on where it grows, with a balanced essential amino acid profile. Aspartic and glutamic acid are the most abundant.
Minerals. Rich in phosphorus, calcium, magnesium and copper. Its total mineral content is high compared with other edible seaweeds.
Unsaturated fatty acids. Low in total fat, and what is there is mostly unsaturated, with an omega-3 to omega-6 ratio described as close to ideal.
Polysaccharides. Sulfated polysaccharides from green caviar have been studied for their antioxidant properties.
Antioxidant compounds. Polyphenols, flavonoids and carotenoids, with antioxidant capacity that under the right growing conditions reaches levels comparable to pomegranate.
One detail worth knowing: composition varies by region and growing conditions. Light, water and sediment all shift the profile, so green caviar from one farm is not identical to green caviar from another.

Why seaweed ends up in skincare
